Last Thursday, April 7, SM Mall of Asia and SM By the Bay hosted a big Philippine fiesta called East Meets West to officially welcome all the delegates, chefs, participants, and media of the biggest culinary event in our country, the Madrid Fusion Manila 2016. This gastronomic event was held at the open-air grounds of the North Fountain of the SM By The Bay.

Thank goodness that traffic was not so bad that day (a rare occurence!), and we were blessed with such perfect weather that it was actually a welcome treat to be outdoors again and have some cool winds blowing while we were busy stuffing ourselves with the delicious food prepared for us!

Spotted at this gastronomic event were some of our well-loved Filipino restaurants and their delectable treats:

Elar’s Lechon. This was a big hit amongst the foreign chefs and delegates!

Vikings’ Kare Kare Trino — Angus ribeye stuffed with ox tongue, string beans, banana bud, bokchoy and peanuts! It came with that delicious rich sauce made of tablea bagoong mousse and peanut anglaise.

Kai Restaurant‘s Aklan Oysters with Bicol uni, Japanese ebiko, microgreens and ponzu ceviche – so fresh!

One of my favorites that night, prepared by Kai Restaurant: Taco with 10-hour roasted US beef belly with scallion kimchi, vinegared red onion, and grilled corn. The beef was fork tender and the combination of flavors inside this little piece of tortilla was just wonderful!

And of course, I went back for seconds for that delicious Elar’s Lechon! I must say, the skin remained crispy throughout the night!

Aside from all that sumptuous food, I also spotted mingling around and enjoying this event these top celebrity chefs :
