A Delicious Lunch at Sage Bespoke Grill


Just recently, I was fortunate to have co-hosted an intimate press lunch with Makati Shangri-La Manila to formally launch the new menu of Sage Bespoke Grill. 

This restaurant of the hotel (formerly known as just Sage Restaurant and Bar) was re-introduced as Sage Bespoke Grill  to the public to showcase a different kind of dining concept. The new menu is now made even better and boasts of the most premium steaks and the freshest seafood, all grilled to perfection.


I helped conceptualize this event by adding a special touch to the table centerpieces. We used a lot of silver, pink carnations, pink roses, pink tulips and red berries to create a more festive and elegant affair. (Thanks Jo Claravall for sourcing these gorgeous blooms!)


The menu and place cards were personalized and so were the surprise giveaways placed on each guest’s table setting.

This pretty little cake giveaway or cakelet as is properly called is from The Delightful Miss Joyce. It was a delicious cake made with chocolate and strawberry cream!


As the guests started to arrive, the ever friendly and always smiling Diane, served what she called The Spoiled Mummy Welcome Drink : champagne with fresh strawberries on top! 🙂  It was a nice and refreshing way to welcome and introduce everyone.


Our first appetizer was this deliciously chilled Jumbo Shrimp Cocktail with cocktail sauce and lemon.


It was followed by creamy Romaine Caesar Salad with parmesan and crispy bacon.


The next appetizer was the perfectly thin sliced fresh Tuna Carpaccio that surely whetted our appetite!


Last appetizer (but my favorite dish amongst them all) : fresh and meaty Crabmeat Crumble with Avocado and Taro Chips!


Chef de Cuisine Gilles Galli then came out of his kitchen to present our main course, the Tomahawk Steak on its very own Josper Grill!

(This is a special kind of grill and oven in one that grills everything to perfection without the risk of overcooking it!)


Sage Bespoke Grill’s steaks are produced by Jack’s Creek Ranch in Australia. What’s great about these Black Angus cattle are that they are grain-fed on a specifically formulated high energy diet and free-range lifestyle. This formula ensures that the cattle enjoy a stress-free life cycle which supports safe, healthy and consistently marbled beef — that is completely free from antibiotics or added hormones. All these qualities make the steak not only full of flavor and very tender, but safe and healthier to eat too!


And just when we thought we’ve been spoiled too much by Chef Gilles Galli, he brought out the other specialty of the house : The Colorado Lamb Rack ! 

The lamb was grilled at 700 degrees, also on the Josper charcoal grill and finished with the Chef’s secret ingredients.


Here’s my (first) plate of grilled meats : A slice of Tomahawk steak and a rack of lamb. Emphasis on this only being my first plate and note the juicy, pink color and the right doneness of the grilled meats here! 🙂

This is what Sage Bespoke Grill is known for : meats done the right way so that the juiciness, texture and flavor are well – preserved.


Of course what would a great steak meal be without its accompanying side dishes? We had four of the most delicious ones : Creamed Spinach, Mac and Cheese, Potato au Gratin and Forest Mushrooms. 


The dessert was another much-awaited course. Our group had the Dessert Sampler which consisted of : Cheesecake topped with Orange Marmalade, Crepe Flambe with Mangoes and Caramel Passion Sauce, Strawberry Ice Cream, Banana Sticky Toffee Pudding with Pecans & Salted Caramel Ice Cream and Cinnamon Sugar Doughnuts with Chocolate Cremeaux and Coffee Mousse.

Whew, we sure had a lot of desserts that day! 🙂 But no complaints here as everything we sampled on this platter was just G-O-O-D!

It was truly one beautiful and delicious lunch shared with very good friends. We all agreed that Sage Bespoke Grill  is the now the runaway winner and the best place for grilled steaks. Kudos to Makati Shangri-La Manila for coming up with yet another innovative dining concept!

    1. Yes, it was divine! 🙂 Sage Bespoke Grill has a lot of new and amazing dishes on the menu now and they are all worth a try!
