TSM Homemade Recipe: Cream Cheese Brownie and Tiramisu Cup

Since most of you liked the last recipe, the¬†Butterscotch Nutella Filled Cookies which I posted here, allow me now to share with you two more dessert recipes that are very simple and easy to follow. These recipes are perfect for those like me who are non-pro or who are just starting to learn how to use their oven. (Guaranteed foolproof!) And because of its simplicity, even our young kids who want to try their hand in baking can easily follow these short and easy steps — making our kitchen even more fun, livelier and of course, messier! ūüôā

I’ve never really been good at baking since I don’t like following recipes and measuring ingredients¬†(raise your hand if you¬†feel the same way!) So to address this concern, I simply modified the recipes of these two dessert favorites, which were handed down to me by my baker friends.¬†Here’s hoping they would forgive me for “butchering” their recipes and just making my life a little bit less complicated!

For the Brownie base :

  • 1 cup unsalted butter, softened
  • 1 cup semi-sweet and dark chocolate buttons (the darker, the better for me!)
  • 1/4 cup cocoa powder
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup flour

For the Cream Cheese topping :

  • 3/4 cup cream cheese, softened
  • 1 egg
  • 1/2 cup sugar
  • 1 tsp vanilla extract

Procedure :

1. Make the brownie base first : Put your chocolate buttons in a medium non-stick pan over low to medium heat. Slightly melt the chocolate. Add the butter and cocoa powder next. Mix them altogether until all the chocolate buttons have melted. Once all ingredients have been mixed in, remove the pan from heat, continue stirring and set aside.

2. On a separate bowl, whisk together : eggs, sugar and vanilla extract.

3. Pour the chocolate mixture (step 1) into the egg mixture (step 2) and whisk until all ingredients are well combined.

4. Add the sifted flour gradually and mix. Add a pinch of salt to taste.

5. Now start your cream cheese topping : On a separate bowl, beat the cream cheese with eggs and sugar, until smooth and blended.

6. Line your muffin pan with cupcake liners and pour your brownie mixture halfway through. Next, get a spoonful of your cream cheese mixture and top it on your brownie mixture inside the pan. Use a clean toothpick to make a “swirl” effect on top.

7. Bake in a preheated oven of 180C for about 20-25 minutes or until toothpick inserted comes out clean. Let it cool and chill for 15 minutes and enjoy with your favorite cup of coffee or your child’s hot chocolate drink! ūüôā

Ingredients :

1 cup graham crackers, crushed

1/2 bar cream cheese, softened

1/2 cup mascarpone cheese

1/2 cup of your favorite coffee (or you may replace this with 2 tbsps of cocoa powder diluted in 1/2 cup of water Рto make this Tiramisu kid-friendly)

More cocoa powder for dusting!

Procedure :

1. Make the first layer : Soak the crushed graham crackers in your coffee and immediately transfer a spoonful or two to your cup.

2. Whisk cream cheese and mascarpone together. Once smooth and blended, spread this cheese mixture on top of your graham crackers. This is your 2nd layer.

3. Spoon another graham cracker mixture as your third layer and top with another cheese mixture as your fourth layer. Repeat layers as necessary to fill your cup all the way to the top.

4. Once all your layers are close to the lid of the glass, dust as much cocoa powder as you want on top and chill in the fridge for 20-30 minutes. Enjoy it cold!
